Be our guest on November 25 for a collaborative multi-course experience that crosses borders and challenges the status quo. This nine-course affair is presented by HTL Restaurant Chef, Ivan Lau and Calgary-based Chef, Keisuke Oyama within our sophisticated signature glass-panelled domes. This unforgettable evening under the stars features a bold fusion of Italian and Japanese cuisines alongside curated beverage pairings.

A serendipitous meeting between HTL Premium Bartender, Kenjiro and Chef Oyama at one of Chef’s Calgary pop-up events originally sparked the concept of a collaborative event. Soon after Kenjiro first experienced Chef Oyama’s cuisine, he knew there was something special that begged to be enjoyed by fellow west coast foodies.

A Tokyo native with experience in prestigious Italian and Japanese kitchens around the world, visiting Chef Oyama’s passion for the two culinary traditions shines through in each of our intricate dishes. Born and raised in Vancouver, Chef Lau offers a wealth of knowledge and experience in Japanese culture and cuisine from his time as Sous Chef at Minami Restaurant.

Tickets starting at $159 per person. Each booking is 2.5 hours, with seatings at 5:30pm, 6pm, 8:30pm, and 9pm. Penalty-free cancellations accepted up to 48-hours from your reservation time; failure to do so will result in a full ticket charge.
