The evening begins with a welcome cocktail alongside an onion cracker amuse, followed by a progression of dishes that highlight both seasonality and precision. Highlights include yellowfin tuna tartare with whisky-kissed compressed watermelon paired with Suntory Toki, enoki mushroom tempura with black garlic and yuzu kosho alongside Hibiki, and a striking kuro risotto with squid ink sushi rice paired with Toki Whisky Black. The experience culminates in Japanese A5 Wagyu striploin with a rich Suntory whisky bordelaise, paired with Yamazaki 18 Year Old, and a refined matcha opera cake paired with Yamazaki 12 Year Old Single Malt.
